I've used trays about 18" across, with smart pots on risers for the last two grows, and it works well but is a bit of a hassle after watering because I have to use a Wet Vac to get the runoff out of the trays. Also put the trays on top of a tarp like "dontknownothin" suggested. It worked well too but was a hassle as I had to move the pots around once in a while_making it necessary to re-arange the tarp every so often. Now I have two plastic trays that I got at HomeDepot_ they are about 2x6 feet and 4" deep_ should work really well_easy to move around, should keep runoff manageable, protect against spills and will have to Wet Vac two trays instead of six. we''ll see. Good luck, sounds like you might be able to connect the intake/vent for your grow room to the vent that used to be used for the dryer if you are going to move the laundry stuff to a different location.
