3 weeks since flipped to 12/12. Did another defol at the weekend but didn’t want to go heavy. I’ve seen some others strip them right back at this stage - any advice for a novice on how much I should remove?

I wouldn't worry about it at 2" high. You can always adjust when your ready to transplant to a larger container. I usually try to get a uniform height at that point.
