      LurkingInTheGrass I think it's just beautiful country all up the Atlantic coast of Canada(haven't been to the left side). Seems like there is a slow recovery going on mostly due to immigration in the long left behind maritime provinces, especially PEI. I follow the news and have been to PEI, Newfoundland, NS, all up the coast. When I was young we did many camping trips all through the area. The property I have was bought by my parents back in 1972, I think it was for $500!..Have paid much more in property tax over the years than the purchase price (ha,ha). I haven't seen it in quite some time and am about due for a trip, maybe this summer. As it sits now my niece and nephew will inherit it when I'm gone. It's north of the Highlands park, near the community center in St Margaret Village, maybe I can trade it for a dual citizenship?

          So Sorry PRIMO I did not see this until now... so here’s my rib method. There are so many rubs out there so you can google it BUT...I found a website that is a big smoking (no... meat and cheese only) website and there is something called Jeff’s Rub and Sauce. Been using the rub for years and it’s nice without the cayenne pepper. Basic brown sugar, paprika, salt, pepper, onion powder, garlic, powder and cumin. I use the 3-2-1 plan. Peel out the membrane on the inside of the ribs, coat in yellow mustard and dust with the rub. I let them sit for about 2-4 hours. Then in the smoker running 250-260F for three hours and spray with apple juice, or orange or pineapple juice ever 15-20 minutes. Sometimes I forgot to buy Apple so whatever juice is in the house. Meat slows down in absorption of smoke around 140F. I have acres of oak and maple so there’s the wood I use. I have a few friends that run a tree service and they bring apple tree logs on occasion. After the 3 hours, I wrap each rack in a double layer of HD aluminum foil and make it like a boat. Pour into that boat about 3-4 oz of juice, sprinkle the ribs with rub... usually toss in a pat or two of butter and occasionally, honey or maple syrup.

          Fold the top of the foil up tight and then the sides so that if steam had to escape, it needs to work at it to do so. Back in the smoker for 2 hours, same temp. This steaming effect seriously tenderizes the meat. After the two hours, they come out of the foil, discard the foil and juices and back into the smoker for 1 more hour. Once on the smoker rack, sauce the ribs with your favorite sauce every 20 minutes and either let them dry up a few minutes or skip the last sauce step.

          Remove and enjoy. Be aware, you will have a hard time picking up a full rack of ribs as they WILL FALL OFF THE BONE ! Take a long spatula or tongs and slip it under the ribs to remove. I’ve had bones just fall out and stay on the grate.

          Competition ribs are never this tender. But I do not compete and once you do it this way, you might try shortening the 2 hour step to 90 minutes to make them less tender and find out your preference. My BBQ sauce is homemade and is a ketchup based recipe... for a reasonable start, look up Sonny;s bbq sauce in a copycat recipe on line. Then go nuts and experiment with adding what ever you wanna see as a dominant flavor. Worcestershire sauce, cumin, ginger, get this....cloves(tastes like Beemans Gum).

          The dogs are border collies. That smoker in the picture was a 275 gallon fuel oil tank. I made it about 5 years ago, trailer and all. And no, I’m not a metal guy, I knew nothing about this stuff before building that smoker. Even the tools I used to cut the steel might as well been from Fred Flintstone. Labor, labor, labor

                  my gràndfather had a similar stove 😁 (in the parlour)
                  The kitchen had a big old wood fired range.
                  grandmother baked bread in it, until the late 70s (when they finally connected the electric stove LOL)

                  SoOrbudgal. I got a brilliant idea last December to make this 8hp Honda engine into an electric start. Gettin’ older and pulling the cord start is tiring.

                  Finished it yesterday...DANG, started right up !! Stacked a full cord between yesterday an this morning .and I did not think it would ever run again after tearing it apart
