Will I need a support structure?

When I asked the guy who I’m getting my clones from, how tall do they get, he laughed and said, “Bigger than you!” Will I need a trellis or some cage thingy to lash the plant to, like you’re supposed to do with tomatoes?
 
If you are growing exactly the way your cloner is growing, expect similar results. By your question, I assume you have not done much growing which means you probably won't achieve the same results your cloner gets.
Breeder's websites are the same. They give you the absolute best results they got from growing their absolute best plants with the absolute best test results and possibly add a fluff factor.
Take a look at plant yo-yo's. If you are growing in a tent, you might already have the bars up top to hang from.
 
4 plants, outdoors (on my deck rail). Tomatoes and Hot Peppers did well there last year.

I’m leaning towards Fox Farms type soil. Especially because one of the guys at the local Nursery was so excited when they had him come talk to me he insisted on giving me his phone # so I can call for help. He recommended Fox farms over coco because he’s just seen better results,
 
IF your soil has all the plant needs it will not need much for support, though my GG4 leaned over in an 80 mph wind, one Colombian purple broke just above the ground. I use 180 gallon raised beds and make my own soil.
 
The way to do it outdoors is as Rwise does. I tried a few different methods outdoors and this method got the best results with the least problems.

I’m using 7 gallon grow bags on my deck rail. If we get a high wind event i might pull them down to the deck or even inside the house.
 
With only 7 gallons of soil and photo's you will need to feed them, and they can be blown over easily.
 
True this. When I had to do pots I was in double the size you had and they were not growing to their full potential. Soil grows need a lot of soil and mass to create the ideal environment for the microbes to function properly and produce nutrients for your plant.
