What could be causing this?

I've grown in straight coco and had the same issue. I increased water from one gallon every day or two to two gallons every two days. This was an out of doors high desert grow. I also put sails up to shade the root balls. Turgidity returns in seconds when the coir is watered thoroughly. Hope my experience helps; I know it can be frustrating looking for solutions.
 
I have 13 40 watt cfl's on my auto...she is loving it.

I don't think it's your lights....

Definitely need to cut some of those HUGE fan leaves off...you have no side growth going on.

They are just growing they're 6th set of leaves so I'm about to top them. Can I safely take those big fan leaves off too? Is that too much at one time? I'm planning to top them once and do some lst as well. I was just reading on GWE about extensive defoliation and I'm very interested in that! That is my long term goal as well as going full hydro but this is my very first grow so I don't want to get in over my head too much. I started with 6 bag seeds and only 2 sprouted so I ordered 3 autos and also planted a freebie photo fem, so I have quite a variety going on for a beginner. Can I safely take a few fan leaves and top a few days later?
 
I used about 3/4 of a gallon combined on those 2 one gallon pots. I actually watered one of them twice because when I checked the run off water it had low ph so I bumped up the ph and rewatered it. In other words, I watered one until water ran out and the other until water ran out twice and both drooped exactly the same. It is frustrating but tonight they're doing much better, a tiny bit droopy but nothing like last night. I documenting when it happens now so maybe I can pinpoint the reason. Thanks for the advice from everyone, it really helps.
 
Take off the fan leaves Let each node grow a little more and then pick the healthiest strongest longest one to top down to maybe a week
 
I've had certain strains that just do this 1-3 hours before lights out they start to droop and are back to perky in the a.m. I've switched the light from CFL to MH to HPS and it's the same no matter what. It happens to these strains no matter the environment, food or water. There's no problems with them otherwise. Not sure what the explanation for this is though.
 
It's normal for the leaves to go up and down every day. They usually start perking up right as lights come on, and then leaves go down for the night. If they're droopy from being overwatered, you don't want to mist them as that makes it worse. They get overwatered because they're not getting enough oxygen at the roots, and if you mist the leaves they'll drink less so it takes even longer for them to use up the water in the soil. If they're getting droopy every time you water, you want to give them less water at a time for a little while, then work back up to a full watering once they get a little bigger :)

I went and made a little timelapse video of some of our plants from last grow. I thought it might help show how they "get up" every morning for the sun, then "go to sleep" every night :)

 
Thank you for taking the time to make that video. I see how much they should go down and back up and wow, those are some beautiful healthy looking plants! I'm in awe! My plants are drooping/wilting at least 3 times that much and taking at least half of the following day to recover. It kills me to see them like that but I think I know why now. They just went from going 4 whole days before needing water to 2 days. I think I underestimated when I moved those little plants into 1 gal pots just how fast they were about to take off. Lesson learned and I won't soon forget it! I'm gonna put them into some 3 gal pots in the next day or so, as soon as I get some more coco. What do you think? That's most likely it huh?
 
If they're drying out really fast then transplanting to a bigger container will definitely help with that! Are they drooping the most right after you water, or right before you water?
 
Well, I had been attributing the wilting to the lights/heat since I was constantly adding more cfls and trying to keep them close. Being a newbie I was figuring out how to deal with getting rid of the heat and keeping the humidity good and it seemed like it would happen when I moved the lights real close, so I would back them off and it would be better. A few days ago when they dropped on me I hadn't changed the lights much and the heat & humidity hadn't changed, the only thing I had done was water them the day before. I started to consider maybe it's not lights or humidity? The next day they were still damp and it happened again. The following day, 48hrs after watering, they were already dried out again-in 2 days instead of 4. I watered them and last night they drooped a lot less. About 1/3 as much as before. The drooping is always about 4 to 5 hours before lights out @ midnight and it takes them half of the next day to fully recover. Literally they aren't fully perked back up until 12 to 2pm!
 
If they're getting better every day that's a good sign! I wouldn't worry once they are perky in the mornings. If plants get overwatered for a while their roots can get root rot. Root rot causes dropping until the roots recover, which can take a few days after the conditions have improved.

If the plants are getting worse whenever you drop the lights, I think it's a sign your plant may not be ready for quite that much light yet :)

Just wanted to give an update on "Droopy" and "Wiltie" :) And thank all of you for your help and advice. Good call on the root/watering problem. I repotted last night into 3 gal pots and I'm sure they're going to be much happier! Here's what they looked like when I pulled the pots off...
