Ph adjustment with Lemon fact

Dear growers,

I've recently did a Ph test with Ph'ed water which i adjusted with lemon juice.
I measured the Ph and it was like 6.8/6.9 (this is what i usually give to my plants and it seems they like it)
After a day or two i measured the exact same water but my Ph went back up to 8 ?
Can this become a problem in the soil?

Is there a methode to adjust ph acidity without fluctuations and added chemicals?
I don't use ph up or down because they contain chemicals i rader not give to my plants.

I don't think the pH would fluctuate enough to make a difference before the plant's used it. For pH down (don't need up), I use Earth Juice crystals, they're just concentrated citric acid. A small pinch brings a gallon of water down 3 points.
