Kind soil and cocoloco

Beginner here - do I mix up the kind soil with o'clock or do I just leave the soil at the bottom of the pot with the coco on top? The kais

So where can we get this kind soil from?...i live in new zealand so assuming can only get feo overseas?...or what would be a good alternative?
