How do i know when i am in veg?

How do I know when I should move off the seedling nute schedule and onto Week One of veg strength nutes?

Do I count days from sprout, number of nodes or something else?

I start feeding mine around 10+ days after they germinate; I want to see roots descending first. Remember, at first they are feeding off those two fat cotyledon leaves, so they ain't starving. I also start at a very low dose of nutes, like maybe 1/5 of what they recommend.
