How much dirt will i need to fill 3 5 gallon buckets? So how many big bags of dirt will i need

You'll need about 15 gallons = 2 cubic feet
You should probably choose your "dirt" wisely. Don't get anything which includes fertilizer unless it is specific to cannabis. Time delay fertilizers in most garden soil can be harmful to cannabis.

I think the big bag of Ocean Forest is 1.5 cubic feet. You might be able to stretch one bag if you mix in some perlite and coco, about 15-25% of each to your mix, which is what a lot of people do with soil.
