I have a 6X5 area in my attic where I lined the walls and most of the ceiling with foil. I also have 2 SP1000 led grow lights and 2 cheaper 1000 lamps I added as side lights but my harvest has been way too light, awesome quality but extremely low quantity. Would using a grow tent instead make a big difference?

Not really.
If using LEDs in a 30 sq ft grow space you will need about 900 watts of modern full spectrum grow light as a minimum if you're growing photoperiod plants. I'm talking wall plug watts not manufacturers pretend watts.
Do you have any photos or numbers on Temperature & humidity?

It's tough if the temps are low. Don't know what type of MJ you grew auto or photos? They like alittle air movement but not temps below 70f they just take longer to mature.
Temp stay between 80-72 degrees and I try to keep it below 60 percent humidity. Same as you as far as grow bags or plastic, last time I transplanted into a grow bag, she was almost ready to flip, I almost lost her! Thank goodness she recovered but was never as healthy. She ended up with heat stress after I forgot to turn the fan back around . I do run 3 separate fans, one large one down the center and two in each corner facing toward each other.
