If you think their humidity has stabilized than it definitely can't hurt to keep them closed for longer, to allow the biological processes to do their thing. Just curious, what's the temperature and humidity where you live?

While drying, my temp was between 70-75 rh from 50-60 for about 8 days. I used a box I made and controlled humidity with computer fans hooked to a hygrometer with a relay. If my rh went above 57 the fans would turn on. I had about two days at 60 caused by a rain storm blowing through.

That sounds like almost perfect drying conditions to me!

My thoughts exactly. I'm going to take your advice and open the jars for an hour tonight. I did half hour last night. I'm so afraid to over dry them.
