Why and when do plants shift from paired nodes to alternating? Some kind of survival thing?

Sign of maturity. Preparing to create flowers it’s a way to avoid mold and take advantage of the whole branch. In a way tells you it’s ready to sex aka flowering

does maturity influence bud develoment?

From personal experience I know that if you try to flower a plant too small it will take way longer to flower because it will continue to veg under 12/12 until it’s ready to flower and still then it will take longer han if you waited. I guess it must affect bud size it’s completely related to branch thickness and height
