I am getting towards the end of my first grow and now the top of one of my plants has almost all Amber trichomes. There isn't a single Amber one past the very top leaves. The plant is halfway through week 7 of flowering and does not look at all ready to harvest. And all of these Amber trichomes have appeared in about 3-4 days. Recently the temp where I'm at has skyrocketed and despite my best efforts I know it's stressing them. Should I cut off the top and let the rest mature? Or just let the plant do its thing? I'm so thrown off by this development any kind of thoughts would be appreciated

It's fairly common to do a staged harvest - just like picking the ripe fruit and letting the rest mature!
Also, use the trichomes on the buds as your guide- not the leavesIt's all bullshit - until you smoke it!
