I agree it looks great! There's as many opinions about defoliation as there are growers so I think everyone has to find their own style! Some people like to take off more than others but you seem to have a really great idea of what you need to do. And I just have to say your Scrog is picture perfect!
If you want a "formulaic" answer that tells you exactly which leaves to take, a simple technique it to take off all the major fan leaves right during the switch to flower, then defoliate it hard again around week 3 of the flowering stage. Then let it do its thing until harvest. That's what commercial growers usually do since they are growing a lot of plants at once and don't really have time to tend the individual plants like we hobbyists do. That definitely takes out a lot of the art, but still gives you really great results without really being able to mess up.
That being said, many growers defoliate more or less, and/or on a different schedule. There definitely is an art to it, as I'm sure you've seen in this forum! There are tons of ways that work and get great results! Like everyone said, making sure the bud sites get access to air and light is the most important thing, and there's lots of different ways to accomplish that
In any case, your plants obviously love what you're doing and have been trained beautifully! Can't wait to to see them continue to develop!

Thank you so much nebula! I'm really looking forward to learn more about pruning cannabis. I'm used to prune plants that are 5' to 40' tall so the smaller aspect is really cool to learn. Plus every species, even every plants, have their own particular way of growing, one must literally be one with the plant to understand the growth habit and how much stress can the plant take. And which tree will support your body weight...π³ but I digress...
