What a cool pic! I have noticed just like you that bending the plant over doesn't always break the apical dominance as well as topping would! I have found it helps a little if you can get the main growth tip and secure it so the growing end is lower than all the others. Even if you're just bending it in a "U" and securing it, because the stem is only flexible at the top. The plant can "sense" all the other growth tips are higher up on the plant which seems to help break the apical dominance a little bit so the side branches grow up more
But it's not exactly the prettiest thing! I have to say your plants look great so I'm not sure I would do anything different from what you've been doing
